Gluten-Free Chocolate Chip Banana Bread

Ingredients:

  • 4-5 ripe bananas.
  • 8 tablespoons softened butter (1 stick).
  • 2 tablespoons milk.
  • 1 tablespoon pure vanilla extract.
  • 2 cups gluten free flour (Bob’s Red Mill 1 to 1 baking flour).
  • 2 eggs.
  • 1/2 teaspoon salt.
  • 1 teaspoon baking soda.
  • 1 teaspoon baking powder.
  • 1/2 cup granulated sugar.
  • (OPTIONAL)1/2 cup chocolate chips.
  • (OPTIONAL) 1/4 shaved chocolate.

Directions:

  • Preheat oven to 350 degrees.
  • Butter or grease a loaf pan.
  • In a large bowl, whisk together flour, salt, baking soda, baking powder.
  • In a medium bowl, mash the bananas.
  • In another medium bowl, cream together sugar and butter. Once the sugar and butter are thoroughly mixed add in vanilla, eggs, milk, mashed bananas and mix.
  • Add the ingredients from the medium bowl into the bowl with the flour mixture and mix.
  • Fold in the chocolate chips or shaved chocolate.
  • Put the mixture into the greased loaf pan.
  • Put into oven for 50 -55 minutes.
  • Once the tooth picked comes out clean. Let banana bread cool for 20 minutes.
