Ingredients:
- 4-5 ripe bananas.
- 8 tablespoons softened butter (1 stick).
- 2 tablespoons milk.
- 1 tablespoon pure vanilla extract.
- 2 cups gluten free flour (Bob’s Red Mill 1 to 1 baking flour).
- 2 eggs.
- 1/2 teaspoon salt.
- 1 teaspoon baking soda.
- 1 teaspoon baking powder.
- 1/2 cup granulated sugar.
- (OPTIONAL)1/2 cup chocolate chips.
- (OPTIONAL) 1/4 shaved chocolate.
Directions:
- Preheat oven to 350 degrees.
- Butter or grease a loaf pan.
- In a large bowl, whisk together flour, salt, baking soda, baking powder.
- In a medium bowl, mash the bananas.
- In another medium bowl, cream together sugar and butter. Once the sugar and butter are thoroughly mixed add in vanilla, eggs, milk, mashed bananas and mix.
- Add the ingredients from the medium bowl into the bowl with the flour mixture and mix.
- Fold in the chocolate chips or shaved chocolate.
- Put the mixture into the greased loaf pan.
- Put into oven for 50 -55 minutes.
- Once the tooth picked comes out clean. Let banana bread cool for 20 minutes.
