Classic Caesar Salad with Homemade Croutons

Dressing Ingredients:

  • 2 minced garlic cloves
  • 1/4 cup olive oil
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoons Worcestershire sauce
  • Salt and pepper to taste

Directions for Dressing:

  • In blender, add garlic, mustard, lemon juice, Worcestershire sauce, red wine vinegar, olive oil, salt and pepper on low speed until combined.

Crouton Ingredients:

  • 3 tablespoons olive oil
  • 1/2 teaspoons minced garlic
  • 5 thick slices of French bread

Directions for Croutons:

  • Preheat oven to 350 degrees.
  • Cut the bread into cubes and put in medium-sized bowl.
  • Add in the garlic and olive oil until combined.
  • Spread out on baking sheet until golden brown (10 minutes).

Salad Ingredients:

  • 1 head of romaine lettuce
  • 1/2 cup Parmigiano-Reggiano cheese
  • Pepper to taste

Directions for Salad:

  • Wash and cut lettuce and set in ice bath.
  • in a large bowl add the lettuce, Parmigiano cheese, pepper, the croutons, and dressing until combined.
