Ingredients:
- 1 large egg
- 1 1/4 sticks of room temperature butter
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 2 3/4 cups finely ground almond flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 1/2 teaspoon pure vanilla extract
- 1 1/2 cups white chocolate chips
- 1/4 cup peppermint chips
Directions:
- Preheat oven to 350 degrees.
- In medium bowl, whisk almond flour, baking soda, salt and combine.
- In a large bowl, using either a whisk or a mixer, cream together the butter, brown sugar and granulated sugar. If using a mixer cream on medium speed for three minutes.
- Add egg and mix. Scrape bowl well, then add vanilla and mix to combine.
- Slowly add the dry ingredients into the large bowl (with the butter, sugars and vanilla), on low speed until combined.
- Add in the peppermint chip and the white chocolate chips and gently mix. Scoop dough into the size of generous golf balls, and transfer them onto line sheet pan.
- Bake the cookies rotating the sheets halfway, until golden brown around the edges. Cook the cookies for 15-18 minutes. Let the cookies sit for 20 minutes after taking them out to set.
